Let me tell you everything!

Can you imagine the emotions a young musician must feel in front of a great orchestra conductor, or the innocent surprise of a child meeting Mickey Mouse at Euro Disney? Is there anything better than seeing your life-long dream take shape before your very own eyes, with you as the astonished protagonist? Who knows? Perhaps all this is due to my way of doing things, or perhaps it is due to a maternal eye that follows me every day, but all my dreams have come true.

S. De Riso, “Dolci in famiglia”, ed. Rizzoli 2009, p.13

  • DESSERTS OF THE SUN

This is a book with the aroma of vanilla and orange blossom, a journey in images in the world and the creations of Salvatore De Riso, one of the most well known and respected interpreters of the art of pastry in the south of Italy. It contains over 60 sweet and savoury recipes, some have been adapted for celiacs . The recipes are explained step by step for the preparation of delicacies such as, ricotta cheese and pear cake, “soffiato di pastier”, or to experiment with unusual combinations; sweet pepper preserve with anchovies stuffed with smoked mozzarella., citrus preserve with elegant finger food, or paccheri pasta filled with ricotta. There are original jars filled with imaginative combinations, such as chocolate and lemon, carrot with orange. Every recipe is a joyous re-elaboration of typical Mediterranean flavours, using produce from land and sea.

  • DESSERTS IN THE FAMILY

It all starts with a long tradition in the preparation of desserts, from the origins in times gone by to the economic boom, when Italian families were finally able to afford fridges and cookers for storing and making desserts at home. Salvatore uses many anecdotes to trace the origins of the birth of “sfogliatella, “babà”, “maritozzi” the invention of “panettone and much more. He goes on to give us sweet and savoury recipes that should never be absent from our tables at family celebrations, children’s parties, boat trips or a picnic in the countryside. There is also a section on how to rustle up a dinner when friends drop by unexpectedly. You can be sure that every moment is garnished with genuine joy and passion.

After the extra-ordinary success of “Desserts of the Sun”,Salvatore De Riso returns with an incredible richly illustrated journey which has been (and will be) the joy of many families.”

Salvatore De Riso

"The search for new ways to give pleasure and satisfaction to the sense of taste - but also the sight, smell and touch - is going on over the centuries with new tricks, pastes and combinations of ingredients”.

In 1908 the De Riso family opened a coffee bar in the main square of Minori where their summer offerings of ice cream and lemon granita became famous throughout the entire Amalfi Coast. Salvatore De Riso, born in 1966, discovered his passion for pastry after studying and working in the kitchens of the best hotels on the coast. In the year 2000 he opened the Pasticceria De Riso on the seafront of Minori and in 2001 a second, larger artisan workshop in nearby Tramonti. Within a few years his pasticceria became one of the best known and most important in Italy. Minori is now a popular destination for those who appreciate fine pastries. They travel to this seaside town specially to buy Salvatore’s products, evocative of the scents, tastes and traditions of the Amalfi Coast. His success is due to the passion he brings to his craft, and above all to the quality of the ingredients he insists on using, acquired from only the finest producers and refiners. Salvatore has studied with some of the greatest pastry chefs in Italy, and in 1994 was the first pasticciere from the south of Italy to be admitted to the prestigious Accademia Maestri Pasticceri Italiani, the founder of which, Igino Massari, says about him:

"Intelligence, skill, and a joyous search for perfection are the hallmarks of De Riso’s work, he stands as a symbol of what is possible if you simply follow your inner voice".
